Cheesy Pap Balls

Yields1 Serving

 500 ml water
 30 ml butter
 2.50 ml salt
 250 ml maize meal
 125 g Lancewood medium fat Mozzarella
 40 g salami, chorizo or bacon (chopped in pieces)
 2 eggs
 180 ml flour

1.Bring the water, butter and salt to the boil. Add the maize meal. Do not stir. Cover and lower the
heat to the lowest setting. Leave for 10 minutes.
2.Stir with a fork, cover and cook over low heat for 10 more minutes. Leave to cool.
3. Mould the grated cheese firmly around the salami cubes. Mould the pap around the salami and
cheese cubes.
4. Dip the balls into the eggs and then into the flour.
5. Deep fry until golden. Drain on absorbent paper.
6. Serve immediately.
7.Delicious with fruit chutney , tomato and onion relish or salsa.
