Savoury Beef Potjie & Krummel Pap

 Ingredients (Serves 4–6) For the Beef Stew * 1 kg beef chuck or stewing beef, cut into cubes * 2 tbsp cooking oil * 1 large onion, finely chopped * 2 cloves garlic, crushed * 2 carrots, diced * 2 potatoes, diced (optional) * 2 tbsp tomato paste * 2 beef stock cubes * 500 ml hot water * 1 tbsp Worcestershire sauce * 1 tsp paprika * 1 tsp mixed herbs * Salt and black pepper to taste * 2 tbsp brown onion soup powder * 2 tbsp brown gravy powder * ¼ cup cold water (for mixing the gravy)

Method

Step 1: Brown the Meat

1. Heat the oil in a large pot.
2. Add the beef cubes and brown them on all sides.
3. Remove and set aside.

Step 2: Build the Flavour

1. In the same pot, sauté the onions until soft and golden.
2. Add the garlic and cook for 1 minute.
3. Stir in the tomato paste and cook for another minute.

Step 3: Simmer the Stew

1. Return the beef to the pot.
2. Add the carrots, potatoes, paprika, mixed herbs, Worcestershire sauce and stock cubes.
3. Pour in the hot water and stir well.
4. Bring to a boil, then reduce the heat.
5. Cover and simmer for 1½–2 hours, or until the meat is tender.

Step 4: Make the Gravy

1. Mix the onion soup powder and gravy powder with the cold water to form a smooth paste.
2. Stir the mixture into the stew.
3. Simmer for 10–15 minutes until the gravy thickens.
4. Season with salt and pepper to taste.

Krummel Pap

Ingredients

* 2 cups TMLT Super Maize Meal
* 4 cups water
* 1 tsp salt

Method

1. Bring the water and salt to a boil in a pot.
2. Sprinkle the maize meal evenly over the water without stirring.
3. Cover and cook for 5 minutes.
4. Using a fork, gently mix and break up the maize meal to create crumbs.
5. Cover and cook on low heat for 20–25 minutes.
6. Fluff with a fork every few minutes until the pap is dry, light and crumbly
